The concept of "Arctic cuisine" appeared not so long ago

This phrase appeared in the Murmansk region in 2018, when the regional tourism development department began to unite active chefs and owners of the hotel and restaurant business.

At the moment, seven gastronomic festivals have already taken place in the Murmansk region. Such a mobile format arouses interest and makes it clear that all this is not some kind of inaccessible luxury, but part of the food culture of the inhabitants of the North. Chefs can instantly test new recipes and get feedback from the public.

The basis of modern Arctic cuisine is simple, understandable dishes of Russian cuisine, the Sami and the inhabitants of Pomeranian villages.

With local products: cod (and its liver), salmon, halibut, ruff, pike and other fish, scallops and hedgehogs, crab, venison, northern berries (lingonberries, blueberries, cloudberries), reindeer moss (the one that deer eat).

Here is a short list of popular dishes: zaeburiha (fish dish similar to stew), northern fish stroganina, venison and lingonberry pies, venison tartare, fresh delicacies from the Barents Sea, reindeer moss chips.
